~ lentil, rice & bean stewp w/ andouille

There's a chill in the air and this recipe is one to warm you right up. So packed full of flavor, that my husband devoured his first bowlful and asked for more. The recipe is my creation and can be eaten as a soup or stew, hence the name. I made mine more like a stew. The recipe is the exact measurements I used. If wanting thinner soup like, simply add more water and seasoning. Enjoy!

Ingredients

  • 6 ounces spicy andouille sausage, sliced
  • 1 cup chopped onion
  • 3/4 cup thin sliced carrots
  • 3/4 cup thin sliced celery
  • 1- 15 ounces stewed tomatoes and juice, rough chopped
  • 1 package uncle bens long grain & wild rice w/ 23 herb and seasoning...add 1/2 of the seasoning packet
  • 1 -15 ounce drained white beans - great northern is what i used
  • 1 teaspoon each - italian seasoning, chicken bouillon paste
  • 1 - bay leaf
  • 3 cloves garlic, minced
  • 1/2 cup lentils, dry
  • 2 1/2 cups chicken stock
  • 3 1/2 cups water, more if needed
  • 1 tablespoon balsamic vinegar
  • 1/4 cup dried parsley

How To Make ~ lentil, rice & bean stewp w/ andouille

  • Step 1
    Add all ingredients to a dutch oven and bring to a boil. Reduce to simmer and cook for 45 minutes to 1 hour, stirring occasionally and adding more water if needed for desired thickness.
