One of my wife's semi-homemade concoctions that is quite tasty.

Ingredients

  • 2 cans Progresso lentil soup
  • 1/2 cup uncooked brown rice
  • 1/2 cup pearl barley, uncooked
  • 2 cans beef broth, reduced-sodium (15 oz. package)
  • 1/2 package frozen spinach (10 oz. package)
  • 1/4 teaspoon garlic powder
  • salt and pepper, to taste

How To Make lentil barley soup

  • Step 1
    In a small saucepan, cook the barley according to package directions. In another small saucepan, cook the rice according to package directions. Set aside both when finished.
  • Step 2
    In a 3-quart saucepan, empty both cans of broth and both cans of soup over medium heat. Stir in salt, pepper, and garlic. Bring it to a gentle simmer, and cook for 10 minutes.
  • Step 3
    Add barley and allow to heat up for about 5 minutes. Add rice and simmer for 15-20 minutes. Add spinach and simmer for 5 more minutes.
