"I'm Too Tired to Cook" Bean with Bacon Soup

I work from 10 to 11 hours a day at my nursery retail store, and most nights I'm exhausted by the end of the workday. I love being able to just throw things in the crock pot and have it ready at the end of the day!

Prep time doesn't include soaking of beans. I soak mine overnight.

16 oz
dry beans, soaked in your preferred manner
carrots, sliced
2 stalk(s)
celery, sliced
onion, diced
bacon, uncooked (i used about 6 slices, cut up)
water to cover

How to Make "I'm Too Tired to Cook" Bean with Bacon Soup


  • 1Put all ingredients in the crock pot, put it on low and let it cook between 7 and 8 hrs.
  • 2Mash it with a potato masher just before serving.
  • 3I don't put any spices in it (actually I had none available yesterday) so we just salt and pepper to taste.
