"i'm too tired to cook" bean with bacon soup
I work from 10 to 11 hours a day at my nursery retail store, and most nights I'm exhausted by the end of the workday. I love being able to just throw things in the crock pot and have it ready at the end of the day! Prep time doesn't include soaking of beans. I soak mine overnight.

Ingredients
- 16 ounces dry beans, soaked in your preferred manner
- 2 - carrots, sliced
- 2 stalks celery, sliced
- 1 - onion, diced
- - bacon, uncooked (i used about 6 slices, cut up)
- - water to cover
How To Make "i'm too tired to cook" bean with bacon soup

Step 1Put all ingredients in the crock pot, put it on low and let it cook between 7 and 8 hrs.

Step 2Mash it with a potato masher just before serving.

Step 3I don't put any spices in it (actually I had none available yesterday) so we just salt and pepper to taste.
