This is a mish-mash of several different Hoppin' John recipes and has been converted to be cooked in a crock pot. Cornbread and a green salad compliment this meal.

Ingredients
- HOPPIN' JOHN
- 1 pound dried black-eyed peas, soaked
- 1 large white onion, diced
- 2 stalks celery, diced
- 1 medium red bell pepper, diced
- 2 teaspoons garlic, minced
- 1-2 cup ham, diced
- 32 ounces chicken broth
- 1-2 tablespoon chicken bouillon granules
- 1-2 tablespoon cajun seasoning blend
- 1 bay leaf
- 4 slices bacon
- salt, to taste
- black pepper, to taste
- 1/2 bunch green onion, diced
- RICE
- 3-4 cups white rice, prepared
How To Make hoppin' john (slow cooker / crock pot)

Step 1Combine the soaked beans (soak overnight), white onion, celery, red bell peppers, garlic & ham in a large crock pot.

Step 2In a bowl, whisk the chicken bouillon granules and Cajun seasoning into the chicken broth. Pour into the crock pot and stir to combine the ingredients.

Step 3Add one bay leaf, pushing it down into the liquid until it is sumerged.

Step 4Lay the four strips of bacon over combined ingredients, side-by-side. It's okay if they sink.

Step 5Cook on high 7-8 hours (or low 4-5 hours), until the beans are tender. Discard the bay leaf and rendered bacon. Taste and adjust seasoning, if necessary (add salt & black pepper to taste).

Step 6Serve over white rice, garnished with a sprinkle of green onion.
