Ingredients

  • 1 package dry green split peas (14 ounces)
  • 1 package alphabet macaroni (14 oz)
  • 1.5 cups brown rice
  • 1 package pearl barley (12 ounces)
  • 1 package lentils (12 ounces)
  • 4 cups dry minced onion

How To Make hearty soup mix

  • Step 1
    Combine all ingredients in a large airtight container.
  • Step 2
    Stir to evenly distribute ingredients.
  • Step 3
    Label as Hearty Soup Mix.
  • Step 4
    Store in a cool, dry place and use within 6 months.
  • Step 5
    Shake well before using.
  • Step 6
    Makes about 12 1/2 cups of mix.
  • Step 7
    Hearty Soup Stock: Put 6 cups of water and 1 1/3 cups of mix in a large kettle or dutch oven.

    Add 1 1/2 tablespoon salt.
  • Step 9
    Bring to a boil.
  • Step 10
    Cover and simmer 1 to 1 1/2 hours.

    Add 2 carrots, sliced, 1 or 2 stalks celery, chopped, 1 1/2 cups cabbage, shredded, 2 (15 ounce) cans of tomato sauce, 1 (24 ounce) can vegetable juice cocktail, and if desired 1 pound lean cooked ground beef or leftover cooked beef.

    Simmer 20 more minutes, until vegetables are cooked.
