Kielbasi is a huge hit with this bean soup. Also Randell's Great Northern Beans in the jar are a must to complete this great soup! I don't drain them, I add everything in the jar to the pot !

Ingredients

  • pound 1 to 2 pounds of kielbasi, cut into 1/4 inch slices
  • cup 1 1/2 cups chopped onions
  • cup 1 cup chopped carrots
  • cup 1/2 cup chopped celery
  • ounce 1 (49 ounce) can of chicken broth
  • bottle 2 large jars of randell's great northern mixed beans
  • ounce 1(16ounce) can whole tomatoes, chopped
  • - 1 whole bay leaf
  • - fresh ground black pepper to taste

How To Make hearty bean soup

  • Step 1
    In large skillet,slightly brown kielbasi. Then add onions, carrots, celery cook until tender,stirring occasionally. In Large Stock Pot ,Stir in broth,beans and chopped tomatoes Kielbasi, onions , carrots, celery and bay leaf cover and bring to a boil. Reduce to simmer for 25 to 30 minutes.Or let simmer longer and mash some of the beans with a large spoon to help thicken soup.Add pepper to taste, discard bay leaf. Serve with chunks of fresh crusty bread. Makes about 6 sevings.
