Ingredients
- FOR THE BROTH
- 12 cups chicken stock
- 2 tablespoons better than bouillon chicken bouillon
- 2 - ham hocks
- 1 tablespoon olive oil
- 1 - red onion chopped
- 1/2 cup dry red wine
- 6 cloves garlic minced
- 2 - bay leaves
- 2 sprigs rosemary
- 4 sprigs thyme
- 1 - red chili pepper seeded and dices
- 1/2 cup sugar
- FOR THE SOUP
- 4 - 15 oz cans black beans
- 1 large onion diced
- 1 tablespoon butter
- 2 cups frozen corn
- 2 cups ham cubed
- - salt to taste
How To Make ham and black bean soup

Step 1For the broth Place the oil in a large pot. Saute the onion for 3 minutes. Add the garlic and saute another minute. Add the red wine and let most evaporate.

Step 2Add the chicken stock and bouillon. Add the ham hocks and remaining ingredients. Bring to a boil and reduce heat to medium low and simmer for 2 hours. Strain the broth and discard the solids.

Step 3Add butter to a pan and add the onion. Saute the onion until it is browned. Add the onion to the broth. Stir in cans of beans undrained. Add the corn and ham. Bring to a boil and reduce the heat and simmer 10 minutes. Season to taste with salt.
