1 lbred lentils

8 cwater

8 Tbspbutter

2 lgonions, chopped

4 clovegarlic, crushed

1/2 tspcayenne

1 tsppaprika

1 tspground coriander
-
2 ctomatoes, peeled and chopped

2 Tbsptomato paste

salt

1 Tbsplemon juice

1 Tbspfresh mint, chopped (or 1 tsp dried)
How To Make ezo gelin soup (turkish wedding soup)

1Cook red lentils according to basic directions, until lentils are very soft and disintegrating.

2In a large stockpot, melt 2 tablespoons of the butter over medium-low heat and saute onions and garlic with cayenne, paprika, and coriander until onions are soft but not browned.

3Add tomatoes and tomato paste and continue to cook for 20 minutes.

4Shortly before serving, add lentils, cooking broth, salt, and lemon juice. Bring to a boil, reduce heat and cook 15 minutes.

5Melt remaining 6 tablespoons butter with the mint. Dribble some mint butter over individual servings of soup.
