Ingredients
- 1 pound red lentils
- 8 cups water
- 8 tablespoons butter
- 2 large onions, chopped
- 4 cloves garlic, crushed
- 1/2 teaspoon cayenne
- 1 teaspoon paprika
- 1 teaspoon ground coriander
- 2 cups tomatoes, peeled and chopped
- 2 tablespoons tomato paste
- - salt
- 1 tablespoon lemon juice
- 1 tablespoon fresh mint, chopped (or 1 tsp dried)
How To Make ezo gelin soup (turkish wedding soup)

Step 1Cook red lentils according to basic directions, until lentils are very soft and disintegrating.

Step 2In a large stockpot, melt 2 tablespoons of the butter over medium-low heat and saute onions and garlic with cayenne, paprika, and coriander until onions are soft but not browned.

Step 3Add tomatoes and tomato paste and continue to cook for 20 minutes.

Step 4Shortly before serving, add lentils, cooking broth, salt, and lemon juice. Bring to a boil, reduce heat and cook 15 minutes.

Step 5Melt remaining 6 tablespoons butter with the mint. Dribble some mint butter over individual servings of soup.
