This black bean soup will warm you up from the inside. The cilantro gives it a fresh appeal and served with cornbread it's an awesome meal.

Ingredients For chicken black bean soup

  • 2 can
    black beans, canned
  • 1 can
    cream of chicken soup
  • 1
    large onion, chopped coarse
  • 1 Tbsp
    minced garlic
  • 1 can
    diced tomatoes
  • 1 c
    cooked chicken thigh meat, shredded
  • 1 c
  • 1/2 c
  • 1/2
    bunch of cilantro, chopped fine

How To Make chicken black bean soup

    In a large pot, combine black beans, onions, cream of chicken soup, water, tomatoes and milk. Bring to a boil, stirring frequently then reduce to simmer for 20 mins.

    Add garlic, chicken and cilantro. Simmer uncovered for another 20 mins. or until soup has desired thickness and onions are clear.

    Best to set aside overnight in fridge to let the flavors marry up. Reheat and serve with a dollop of sour cream. A pan of cornbread works really well with this!
