Ingredients

2 can(s)black beans, canned

1 can(s)cream of chicken soup

1large onion, chopped coarse

1 Tbspminced garlic
-
1 can(s)diced tomatoes

1 ccooked chicken thigh meat, shredded

1 cwater
-
1/2 cmilk
-
1/2bunch of cilantro, chopped fine
How to Make CHICKEN BLACK BEAN SOUP
- In a large pot, combine black beans, onions, cream of chicken soup, water, tomatoes and milk. Bring to a boil, stirring frequently then reduce to simmer for 20 mins.
- Add garlic, chicken and cilantro. Simmer uncovered for another 20 mins. or until soup has desired thickness and onions are clear.
- Best to set aside overnight in fridge to let the flavors marry up. Reheat and serve with a dollop of sour cream.
A pan of cornbread works really well with this!
