Ingredients
- 2 cans black beans, canned
- 1 can cream of chicken soup
- 1 - large onion, chopped coarse
- 1 tablespoon minced garlic
- 1 can diced tomatoes
- 1 cup cooked chicken thigh meat, shredded
- 1 cup water
- 1/2 cup milk
- 1/2 - bunch of cilantro, chopped fine
How To Make chicken black bean soup

Step 1In a large pot, combine black beans, onions, cream of chicken soup, water, tomatoes and milk. Bring to a boil, stirring frequently then reduce to simmer for 20 mins.

Step 2Add garlic, chicken and cilantro. Simmer uncovered for another 20 mins. or until soup has desired thickness and onions are clear.

Step 3Best to set aside overnight in fridge to let the flavors marry up. Reheat and serve with a dollop of sour cream. A pan of cornbread works really well with this!
