Ingredients

  • 2 tablespoons olive oil
  • 1 small onion
  • 1 small carrot
  • 1 stalk celery
  • 2 cloves garlic
  • 15.5 oz ounces butter beans
  • 1 - chicken bouillon cube
  • 1/2 teaspoon rosemary sprigs
  • 2 cups water

How To Make butter bean soup with parmesan

  • Step 1
    Chop onion, carrots, celery and garlic.
  • Step 2
    In a large saucepan, sauté the onion, carrot, celery and garlic in olive oil until the onion is soft.
  • Step 3
    Add the beans, bouillon. rosemary and water. Simmer until heated thoroughly.
  • Step 4
    If you would like a thicker soup, remove half of the recipe and process in a blender, then return to the soup.
  • Step 5
    Serve topped with grated Parmesan cheese.
