Ingredients

  • 2 Tbsp
    olive oil
  • 1 small
    onion
  • 1 small
    carrot
  • 1 stalk(s)
    celery
  • 2 clove
    garlic
  • 15.5 oz oz
    butter beans
  • 1
    chicken bouillon cube
  • 1/2 tsp
    rosemary sprigs
  • 2 c
    water

How to Make Butter Bean Soup with Parmesan

Step-by-Step

  1. Chop onion, carrots, celery and garlic.
  2. In a large saucepan, sauté the onion, carrot, celery and garlic in olive oil until the onion is soft.
  3. Add the beans, bouillon. rosemary and water. Simmer until heated thoroughly.
  4. If you would like a thicker soup, remove half of the recipe and process in a blender, then return to the soup.
  5. Serve topped with grated Parmesan cheese.
