Ingredients
- 1 package bulk sausage
- 1 medium onion
- 4 cans black-yed peas (you can use dry and it takes much longer
- 2 cans rotel ( i like hot stuff, so i use the hot version)

Step 1Break up and brown the sausage, drain, add the onions and cook until translucent

Step 2Pour in undrained peas and Rotel.

Step 3Bring to a boil, turn down, let simmer for about 15 or 20 minutes to combine the flavors.
