This is so good for a quick one pot dinner on a cold day! I just make some corn bread and it will be a whole meal.

Ingredients

  • 1 package bulk sausage
  • 1 medium onion
  • 4 cans black-yed peas (you can use dry and it takes much longer
  • 2 cans rotel ( i like hot stuff, so i use the hot version)

How To Make black-eyed pea soup-quick

  • Step 1
    Break up and brown the sausage, drain, add the onions and cook until translucent
  • Step 2
    Pour in undrained peas and Rotel.
  • Step 3
    Bring to a boil, turn down, let simmer for about 15 or 20 minutes to combine the flavors.
