My husband makes sure we have this every New Years Day and insists everyone has at least one serving or at least tastes it to have their black-eyes peas! My best friend has even won contests using this recipe!

16 oz. smoked sausage links, halved lengthwise and sliced

onion, chopped
2 can(s)
15 oz. black-eyed peas, rinsed and drained
1 can(s)
diced tomatoes, drained
1 can(s)
tomato sauce
1 c
beef broth
1/4 tsp
garlic powder
1/4 tsp
cajun seasoning
1/4 tsp
1/8 tsp
1/8 tsp
cayenne pepper
1/8 tsp
hot pepper sauce
1-1/2 c
frozen corn, thawed

How to Make Black-Eyed Pea Sausage Stew


  • 1In large skillet, cook sausage and onion over medium heat until meat is lightly browned; drain.
  • 2Stir in the peas, tomatoes, tomato sauce, broth and seasonings. Cook and stir for 10-12 minutes or until hot and bubbly.
  • 3Stir in the corn; cook 5 minutes longer or until heated through.
