black-eyed pea sausage stew

My husband makes sure we have this every New Years Day and insists everyone has at least one serving or at least tastes it to have their black-eyes peas! My best friend has even won contests using this recipe!

Ingredients

  • 1 package 16 oz. smoked sausage links, halved lengthwise and sliced
  • 1 small onion, chopped
  • 2 cans 15 oz. black-eyed peas, rinsed and drained
  • 1 can diced tomatoes, drained
  • 1 can tomato sauce
  • 1 cup beef broth
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cajun seasoning
  • 1/4 teaspoon pepper
  • 1/8 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • 1/8 teaspoon hot pepper sauce
  • 1-1/2 cup frozen corn, thawed

How To Make black-eyed pea sausage stew

  • Step 1
    In large skillet, cook sausage and onion over medium heat until meat is lightly browned; drain.
  • Step 2
    Stir in the peas, tomatoes, tomato sauce, broth and seasonings. Cook and stir for 10-12 minutes or until hot and bubbly.
  • Step 3
    Stir in the corn; cook 5 minutes longer or until heated through.
