Ingredients
- 3 slices bacon
- 2 cans black beans, drained
- 1 ham hock
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1/2 cup brown sugar
- 1 tablespoon mushroom ketchup or Worcestershire sauce
- 2 cups beef broth
- salt and pepper
- dried thyme
- 1/2 teaspoon red pepper flakes
- 1 cup fideo pasta
- grated Parmesan, to serve, optional
How To Make black bean and pasta soup

Step 1Cook the bacon until crisp and chop. Mix all ingredients together except the pasta and cheese in a pot.

Step 2Bring to a boil. Reduce to a simmer and simmer about 45 minutes. Add the pasta and cook about 15 more minutes. If it isn't soupy enough, add more beef broth or water. Taste and adjust for seasoning.

Step 3Serve with Parmesan cheese, if desired.
