Ingredients

  • 2 cups dried beans, soaked
  • 1 - onion, chopped
  • 2 - carrots, peeled and sliced
  • 1 - celery stick, sliced
  • 2 - tomatos, chopped
  • 1/2 cup olive oil
  • 2 - bay leaves
  • 1 teaspoon salt
  • 1 pinch pepper
  • 1 teaspoon cumin
  • 3 pints stock

How To Make bean soup

  • Step 1
    Cook the soaked beans in fresh water for 10 minutes and drain.
  • Step 2
    In a soup pot, heat the oil and gently fry the onion.
  • Step 3
    Add the rest of the vegetable and seasonings.
  • Step 4
    Stir well and add the beans.
  • Step 5
    Ensure that all the vegetable are covered with oil and pour in the stock.
  • Step 6
    Allow to simmer until the beans are cooked and the vegetables are tender.
