A wonderful, hearty soup for a cool autumn night!

Ingredients

  • 1/4 pound sliced ham
  • 1 slice onion
  • 2 cans great northern beans
  • 2 tablespoons tomato paste
  • 2 - potatoes diced
  • - salt, pepper to taste
  • 1/2 teaspoon granulated garlic
  • 1 quart vegetable stock
  • 2 tablespoons olive oil

How To Make bean, potato and ham soup

  • Step 1
    Heat oil in pan.
  • Step 2
    Dice ham and put in pot.
  • Step 3
    Cut the onion into thin wedges and put in pot
  • Step 4
    Cook for about 3-4 minutes
  • Step 5
    Add the cannelloni beans liquid and all
  • Step 6
    Add the tomato paste
  • Step 7
    Pour in the vegetable stock and bring to boil.
  • Step 8
    Cut up the potatoes into small pieces and add to the liquid
  • Step 9
    Add salt, pepper and garlic
  • Step 10
    Simmer about 35-45 minutes until potatoes are soft and tender.
