The blue cheese gives this soup a little zing. I added the bacon, blue cheese crumbles and garlic croutons on top to really top this soup off. Very delicious!!!

Salsa is an unusual ingredient, but provides so much flavor and, combined with the beans, gives the soup some texture. Creamy and satisfying, this is the perfect soup for a cold night.

- 2 cloves garlic minced
- 1/2 cup onion
- 1 tablespoon olive oil, extra virgin
- 3 cups chicken stock
- 1 can cream of tomato soup
- 1 cup salsa, mild
- 5 1/2 ounces blue cheese
- 4-5 ounces cream cheese
- 3 teaspoons dried basil
- 2 teaspoons ground pepper
- 2 teaspoons sea salt
- 1 cup half and half
- 48 ounces pre-cooked northern beans
- 6-8 slices smoked bacon
- - crumbled blue cheese
- - sour cream
- - garlic croutons

Step 1Cook onion and garlic in olive oil until translucent.
