Ingredients

  • 2 tablespoons olive oil
  • 250g - speck or bacon, finelly chopped
  • 2 - red onions
  • 2 tablespoons balsamic vinegar
  • 1 cup dry brown lentils (buy the best)
  • 5 cups liquid vegetable stock
  • 1 - large bay leaf
  • 2 - large sprigs of fresh thyme

How To Make bacon , lentil & red onion soup

  • Step 1
    Heat the olive oil in a heavy based soup pot and brown the bacon add the onion and fry until caramalized. Add the balsamic vinegar to deglaze the pot. Then add the dry lentils, vegetable stock and fresh herbs. Simmer until lentils are just tender...about 30 minutes usually. Add more stock if needed.
