~ another tasty red beans & rice ~

I had a 1 pound bag of red beans and a ham bone I needed to use up, so this is what came of it. Hubby loves any kind of bean recipe at any time of the year. He had me add some ghost peppers to it, boy was it ever spicy. LOL! Add as much heat or as little as you prefer. Can never have enough bean recipes. Enjoy!

Ingredients

  • 1 pound dry red beans
  • 2 cups water
  • 2 - 32 ounces cartons - chicken stock or broth
  • 1 - hambone or ham hocks
  • 4 small celery stalks, sliced
  • 1 cup each - onion, chopped & red bell pepper or your favorite - chopped
  • 3 - 4 cloves garlic, chopped
  • 1/2 -3/4 teaspoon red pepper
  • 1/2 teaspoon black pepper
  • 1 1/2 - 2 pounds smoked sausage, sliced
  • salt to - taste if ham is not salty

How To Make ~ another tasty red beans & rice ~

  • Step 1
    Place everything in a stock pot and bring to a boil, lower heat and simmer for 2 1/2 hours, stirring occasionally and adding a little water if need be as the beans cook down.
  • Step 2
    Remove ham bone and let cool, then remove any meat there might be. Add to the pot of beans. In a medium skillet add a small amount of oil, then brown the sausage. Add this to the pot, stir and continue cooking another 30 minutes or until beans are tender. I added no salt as my hambone was plenty salty. Adjust seasonings to your own taste. Serve over cooked white rice. Enjoy!
