Ingredients
- 1 cup white beans, dried
- 2 quarts water
- 1 - bone from baked ham
- 1 - bay leaf
- 3 - bone from baked ham
- 1 large onion, quartered
- - salt and pepper to taste
How To Make annie mae jones ham and bean soup

Step 1Cover the beans with water and soak overnight.

Step 2Drain beans and place in soup pot, add water, ham bone, bay leaf, parsley and onion.

Step 3Bring to a boil, then lower heat, partially cover, and let simmer very gently until the beans are tender.

Step 4Add more water if needed.

Step 5Remove and discard bay leaf.

Step 6Remove ham bone, cut off all meat, and return it to the pot.

Step 7Remove about 1 cup of the beans and a little bean liquid.

Step 8Mash to a paste and stir this into the pot to thicken soup.

Step 9Add salt and pepper to taste.

Step 10If desired, thin soup with milk.
