Ingredients

  • 1 cup white beans, dried
  • 2 quarts water
  • 1 - bone from baked ham
  • 1 - bay leaf
  • 3 - bone from baked ham
  • 1 large onion, quartered
  • - salt and pepper to taste

How To Make annie mae jones ham and bean soup

  • Step 1
    Cover the beans with water and soak overnight.
  • Step 2
    Drain beans and place in soup pot, add water, ham bone, bay leaf, parsley and onion.
  • Step 3
    Bring to a boil, then lower heat, partially cover, and let simmer very gently until the beans are tender.
  • Step 4
    Add more water if needed.
  • Step 5
    Remove and discard bay leaf.
  • Step 6
    Remove ham bone, cut off all meat, and return it to the pot.
  • Step 7
    Remove about 1 cup of the beans and a little bean liquid.
  • Step 8
    Mash to a paste and stir this into the pot to thicken soup.
  • Step 9
    Add salt and pepper to taste.
  • Step 10
    If desired, thin soup with milk.
