Even though I live in SO Florida, where the winters are mild. A hearty bowl of bean soup always remind me of living up north on a fall day when you want something to warm the soul. This is a quick and easy no fuss soup rich in flavor.

Ingredients

  • 1 can 15.5 oz navy beans, rinsed and drained
  • 1 can red kidney beans, rinsed and drained
  • 1 can black beans, rinsed and drained
  • 1 package 32 oz low sodium chicken broth
  • 3 cloves garlic chopped
  • 1 medium onion chipped
  • 1 package italian turkey sauage, spicy (about 6 links)
  • 2 tablespoons olive oil, light
  • 1 can 14.5 oz no salt diced tomatoes

How To Make a little touch of home bean soup

  • Step 1
    In a large sauce pan (about 4 - 5 quart) add olive oil, onions,garlic and saute until tender. Then add chicken broth and dice tomatoes. Bring to boil, then reduce to medium heat.
  • Step 2
    Make mini sausage meat balls - squeezed sausage meat out of each link casing and make mini meat balls and drop into soup mixture. Cook for about 5 - 10 minutes, stirring occasionally, until sausage is tender.
  • Step 3
    Season with MRS Dash Herb & Garlic seasoning to taste. Add drained beans and stir gently, let simmer for about 10 minutes. Serve in medium size bowls and garnish with fresh parsley. I like to put a little Goat cheese crumble or Parmesan cheese on top. This is also great with your favorite French bread. Enjoy
