15 bean soup
This is a super easy recipe I make by dressin' up the pre-packaged 15 bean soup. It's great on chilly days and I make it for family meals quite a bit. It's wonderful served with Collard greens, Fried potatoes and of course corn bread. Enjoy!

Ingredients
- 1 package hurst 15 bean dry soup mix. (found with other dry beans) cajun or ham flavored
- 1 large green pepper; diced
- 1 large carrot; diced
- 1 medium onion; diced
- 2 - celery stalks; sliced
- 3 tablespoons butter
- 8 cups water
- 1 - smoked ham hock
- - the juice of 1 lemon
- - salt and pepper; to taste
How To Make 15 bean soup

Step 1In a large skillet saute vegetables in butter until onions are translucent.

Step 2Pour bean mix into a large slow cooker. Add the 8 cups water and veggies (including butter they sauteed in) and ham hock.

Step 3Cook on low for 8 hrs stirring occasionally. After 5 hours of cooking add seasoning packet included in packaged beans. At the 7 1/2 hour mark add salt and pepper if desired and add the lemon juice (this helps to reduce gas and bloating) stir well.Enjoy!
