Soft Dinner Rolls

INGREDIENTS
2 1/2 teaspoons (7g) regular instant yeast or active dry yeast
3 tablespoons (39g) granulated sugar
1 1/4 teaspoons salt
3 cups (361g) King Arthur Unbleached All-Purpose Flour
1/4 cup (46g) potato flour or 1/2 cup (46g) potato flakes
1/4 cup + 1 tablespoon (71g) lukewarm water (potato water if you have any saved)
3/4 cup (170g) lukewarm milk
3 tablespoons (43g) butter softened or melted
