1 cbrown sugar
1/4 clight corn syrup
15 cpuffed corn (not popcorn)
1/2 tspbaking soda
How to Make Caramel Corn With a Twist
- Place puff corn in a deep roasting pan lightly sprayed with Canola oil (or PAM), set aside. Pre-heat oven to 200 F.
- In a deep heavy sauce pan, melt butter, corn syrup, brown sugar and salt. Bring to a rolling boil and stabilize heat to sustain boil for 5 more minutes, stirring constantly. Remove from heat and add baking soda, mixing well.
- Immediately pour over the corn, mixing well to coat evenly. Place the roasting pan in the pre-heated oven on top rack for one hour, stirring every 15 minutes. Remove from oven, let cool slightly, then break apart by hand. Store air tight. Enjoy and share!
