This is the most unique caramel corn I have ever had. The use of Puff corn rather than pop corn makes it light and the lack of kernels is a real plus. WARNING: This stuff is addictive :) Our family joke is this stuff is Christmas "Crack" because it's so addictive.

Ingredients For caramel corn with a twist

  • 1 c
    brown sugar
  • 1/2 c
    butter
  • 1/4 c
    light corn syrup
  • 1/2 tsp
    salt
  • 15 c
    puffed corn (not popcorn)
  • 1/2 tsp
    baking soda

How To Make caramel corn with a twist

    Place puff corn in a deep roasting pan lightly sprayed with Canola oil (or PAM), set aside. Pre-heat oven to 200 F.

    In a deep heavy sauce pan, melt butter, corn syrup, brown sugar and salt. Bring to a rolling boil and stabilize heat to sustain boil for 5 more minutes, stirring constantly. Remove from heat and add baking soda, mixing well.

    Immediately pour over the corn, mixing well to coat evenly. Place the roasting pan in the pre-heated oven on top rack for one hour, stirring every 15 minutes. Remove from oven, let cool slightly, then break apart by hand. Store air tight. Enjoy and share!
