caramel corn with a twist
This is the most unique caramel corn I have ever had. The use of Puff corn rather than pop corn makes it light and the lack of kernels is a real plus. WARNING: This stuff is addictive :) Our family joke is this stuff is Christmas "Crack" because it's so addictive.

Ingredients
- 1 cup brown sugar
- 1/2 cup butter
- 1/4 cup light corn syrup
- 1/2 teaspoon salt
- 15 cups puffed corn (not popcorn)
- 1/2 teaspoon baking soda
How To Make caramel corn with a twist

Step 1Place puff corn in a deep roasting pan lightly sprayed with Canola oil (or PAM), set aside. Pre-heat oven to 200 F.

Step 2In a deep heavy sauce pan, melt butter, corn syrup, brown sugar and salt. Bring to a rolling boil and stabilize heat to sustain boil for 5 more minutes, stirring constantly. Remove from heat and add baking soda, mixing well.

Step 3Immediately pour over the corn, mixing well to coat evenly. Place the roasting pan in the pre-heated oven on top rack for one hour, stirring every 15 minutes. Remove from oven, let cool slightly, then break apart by hand. Store air tight. Enjoy and share!
