I came up with this recipe one day around noon at my husband's request for something quick for lunch. He loved it. The egg was actually his idea. I later tested it on my son and daughter. They loved it. We have tried different types of bread, and it is always good. It is now a familly favorite.

Ingredients For the cristobal

  • 2 slice
    bread (your favorite kind)
  • 1 slice
    sharp cheddar cheese ( it can be prepackaged slices or sliced from a block)
  • 1
    egg
  • 1-2 Tbsp
    butter
  • 1 dash
    cajun seasoning
  • cooking spray

How To Make the cristobal

    Spray a skillet with cooking spray. Place a 1/2 teaspoonful of butter in skillet and heat. Crack egg in skillet and sprinkle with cajun seasoning to taste. Fry egg on each side to the consistency that you like. Set egg aside to go on sandwich. Take some of the butter and spread on one side of each of the slices of bread. Place the cheese slice on the unbuttered side of one slice of the bread and then place the egg on it and finally put the other piece of bread on the egg ( buttered side up) to complete the building of the sandwich.

    Put 1/2 of the remaining butter in the skillet and heat until melted. Place the sandwich in the skillet and cook over medium heat until brown and toasted. Lift the sandwich and place the remaining butter in the skillet. Flip the sandwich over and cook until toasted on that side. Enjoy.
