Ingredients
- 6 large tomatoes
- 1 tablespoon salt
- 1 tablespoon super fine sugar
- 1 tablespoon green peppercorns
- - olive oil, high quality
How To Make sweet, salty, spicy tomatoes

Step 1Cut off the stem end of tomatoes and then slice into approximately 1/2 inch slices.

Step 2Place sliced tomatoes on rimmed backing sheet.

Step 3Brush olive oil over each tomato slice.

Step 4Mix sugar and salt together. Sprinkle mixture on each slice.

Step 5In a mortar, grind the peppercorns until very crushed but not totally pulverized.

Step 6Sprinkle pepper on each slice.

Step 7Place baking sheet in 175 degree oven for approximately 3 hours. The tomatoes will still be slightly juicy and carmalized.
