Great snack for anytime. At first I couldn't decide if I wanted to make oatmeal raisin cookies or peanut butter cookies. I started playing with the recipe and ended up with more of a soft-baked granola bar. I love the texture of the banana chips once baked and they add a great flavor. With the base recipe you could add your favorites or omit anything you don't care for. Enjoy (: Southern Food With Flare

Ingredients

  • 1/2 cup extra crunch peanut butter
  • 1 cup light brown sugar, packed
  • 2 - eggs
  • 1/2 teaspoon vanilla
  • 1 cup flour
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups oats, regular
  • 1/2 cup broken banana chips
  • 1/2 cup raisins

How To Make soft-baked peanut butter granola bars

  • Step 1
    Preheat oven to 350 degrees. In your mixer combine peanut butter and sugar. Mix on medium speed until well combined. Add eggs and vanilla, mix on low until incorporated.
  • Step 2
    In a large bowl combine, flour, salt, cinnamon, and baking soda.
  • Step 3
    Slowly add to peanut butter mixture on low speed. Add oats, banana chips and raisins. Mix until combined. Dough will be stiff.
  • Step 4
    Press into a 9 X 13 baking sheet covered with aluminum foil. Bake for 25 to 30 minutes. Don't over bake. Lift out with aluminum foil and cut into bars.
  • Step 5
    Cool to warm or room temperature before serving. Store leftovers in plastic containers.
