soft-baked peanut butter granola bars
Great snack for anytime. At first I couldn't decide if I wanted to make oatmeal raisin cookies or peanut butter cookies. I started playing with the recipe and ended up with more of a soft-baked granola bar. I love the texture of the banana chips once baked and they add a great flavor. With the base recipe you could add your favorites or omit anything you don't care for. Enjoy (: Southern Food With Flare

Ingredients
- 1/2 cup extra crunch peanut butter
- 1 cup light brown sugar, packed
- 2 - eggs
- 1/2 teaspoon vanilla
- 1 cup flour
- 1 1/2 teaspoons cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups oats, regular
- 1/2 cup broken banana chips
- 1/2 cup raisins
How To Make soft-baked peanut butter granola bars

Step 1Preheat oven to 350 degrees. In your mixer combine peanut butter and sugar. Mix on medium speed until well combined. Add eggs and vanilla, mix on low until incorporated.

Step 2In a large bowl combine, flour, salt, cinnamon, and baking soda.

Step 3Slowly add to peanut butter mixture on low speed. Add oats, banana chips and raisins. Mix until combined. Dough will be stiff.

Step 4Press into a 9 X 13 baking sheet covered with aluminum foil. Bake for 25 to 30 minutes. Don't over bake. Lift out with aluminum foil and cut into bars.

Step 5Cool to warm or room temperature before serving. Store leftovers in plastic containers.
