Great snack for anytime. At first I couldn't decide if I wanted to make oatmeal raisin cookies or peanut butter cookies. I started playing with the recipe and ended up with more of a soft-baked granola bar. I love the texture of the banana chips once baked and they add a great flavor.

With the base recipe you could add your favorites or omit anything you don't care for.

extra crunch peanut butter

light brown sugar, packed

eggs
1/2 tsp
vanilla
1 c
flour
1 1/2 tsp
cinnamon
1/2 tsp
baking soda
1/2 tsp
salt
1 1/2 c
oats, regular
1/2 c
broken banana chips
1/2 c
raisins

How to Make Soft-Baked Peanut Butter Granola Bars

Step-by-Step

  • 1Preheat oven to 350 degrees. In your mixer combine peanut butter and sugar. Mix on medium speed until well combined. Add eggs and vanilla, mix on low until incorporated.
  • 2In a large bowl combine, flour, salt, cinnamon, and baking soda.
  • 3Slowly add to peanut butter mixture on low speed. Add oats, banana chips and raisins. Mix until combined. Dough will be stiff.
  • 4Press into a 9 X 13 baking sheet covered with aluminum foil. Bake for 25 to 30 minutes. Don't over bake. Lift out with aluminum foil and cut into bars.
  • 5Cool to warm or room temperature before serving. Store leftovers in plastic containers.
