    Heat 1/2 inch veg oil in med saucepan to 350 degrees. Fry 4 oz rice vermicelli until crisp, about 20 seconds; drain. Warm 1/4 c EACH red Thai curry paste and veg oil, and 1 t kosher salt in the microwave, 1 min; drizzle over 16 c hot popcorn. Toss with 2 c roasted cashews and the fried noodles.
