Crispy and sweet, who can resist the flavor of caramel and popcorn, peanuts, and chex? Mmm, I can't!

Ingredients

  • 6 cups crispy cereal, chex or crispix
  • 3 cups plain popped popcorn
  • 2 cups small square pretzels
  • 1 cup cocktail peanuts (optional)
  • 1 cup firmly packed brown sugar
  • 1/2 cup butter or margarine
  • 1/2 cup light corn syrup
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking soda

How To Make caramel popcorn and chex mix

  • Step 1
    Coat 17 x 11 x 2-inch baking pan with cooking spray. Combine cereal, popcorn, pretzels and peanuts (if desired). Set aside.
  • Step 2
    In heavy 3-quart saucepan combine brown sugar, butter and corn syrup. Bring to boiling over medium heat, stirring constantly. Reduce heat. Simmer for 5 minutes, stirring constantly. Remove from heat. Stir in vanilla and baking soda. Immediately pour over cereal mixture. Stir until evenly coated.
  • Step 3
    Bake at 250°F about 1 hour or until deep golden brown, stirring every 15 minutes. Spread on wax paper. Separate clumps. Cool completely. Store in airtight container.
