Ingredients

  • 1 cup butter
  • 2 cups brown sugar, firmly packed
  • 1/2 cup light or dark corn syrup
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 5 quarts or 20 cups of popped corn

How To Make caramel corn

  • Step 1
    Preheat the oven to 250 degrees.
  • Step 2
    Melt butter in a sauce pan and stir in the brown sugar, syrup and salt.
  • Step 3
    Bring to a boil while stirring constantly. Then boil without stirring for 5 minutes or until a candy thermometer hits 248 degrees.
  • Step 4
    Remove and stir in the baking soda and vanilla.
  • Step 5
    Pour over the popped corn, slowly mixing well.
  • Step 6
    Put popped corn into two large baking pans.
  • Step 7
    Bake the mix for 45 to 60 minutes! Stir every 15 minutes.
  • Step 8
    When finished, cool completely and break into pieces. Store in an airtight container.
