My good friend Elie, turned me on to these,last year. She was raised in South America. Her family was missionaries there for many years. She has many wonderful recipes to share. They are so easy to make. I keep some frozen in the freezer..for late night snacks .....YEAH !

Ingredients

  • 4 - flour tortillas
  • 1 cup shredded monterey cheese
  • 1/2 cup coarsley, chopped shrimp
  • 1/2 cup thinly sliced green onions and tops
  • 1 tablespoon finly chopped cilantro or parsley

How To Make shrimp quesadillas

  • Step 1
    Sprinkle half of each tortilla with cheese, shrimp, onions,and cilantro or parsley. Fold tortilla into halves.Pack in freezer bags and freeze.
  • Step 2
    Cook and serve. Thaw quesadillas at room temperature 10-15 minutes. Cook in a lightly greased skillet over medium heat until lightly browned on both sides. Cut tortilla into 4 wedges, and serve.
