Ingredients
- COOKIES:
- 2 1/2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon, ground
- 1/2 teaspoon nutmeg, ground
- 1/2 teaspoon salt
- 1 1/2 cups sugar
- 1/2 cup butter (1 stick), softened
- 1 cup pumpkin purée
- 1 large egg
- 1 teaspoon vanilla extract
- FILLING:
- 6 tablespoons butter, softened
- 4 ounces cream cheese, softened
- 1 teaspoon vanilla extract
- 2 cups powdered sugar
- GLAZE (OPTIONAL):
- 1 cup powdered sugar
- 1 tablespoon corn syrup, light
- 2 tablespoons water
- 10 - drops food coloring (optional)
How To Make pumpkin cookies with cream cheese filling

Step 1Preheat oven to 350F. Grease baking sheet, or use parchment paper.

Step 2In a medium bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg & salt.

Step 3In a large mixer bowl, beat sugar & butter until we’ll blended. Beat in pumpkin, egg & vanilla until smooth.

Step 4Gradually beat in flour mixture.

Step 5Drop dough by rounded tablespoons onto prepared baking sheet.

Step 6Bake for 15-18 minutes or until edges are firm. Cool on baking sheet for 2 minutes, then move to a wire rack to cool completely.

Step 7FOR FILLING: Combine the filling ingredients in a bowl using an electric mixer. Beat well until the filling is smooth.

Step 8When the cookies have completely cooled, Frost the bottom of a cookie, then press another cookie on top to make a sandwich. Repeat with remaining cookies.

Step 9FOR GLAZE: Combine powdered sugar, corn syrup & water together. Stir in food coloring if desired.

Step 10** This glaze must be stirred each time before glazing each cookie. If it is not stirred vigorously before each one, it will dry with a mottled look instead of a solid color.

Step 11Spread the glaze over the top of the cookie sandwich. It will dry to a hard, shiny finish. It dries quickly.

Step 12Note: this glaze is also great as a base coat for decorated cookies.
