How to Make Pumpkin Cookies with Cream Cheese Filling

  1. Preheat oven to 350F. Grease baking sheet, or use parchment paper.
  2. In a medium bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg & salt.
  3. In a large mixer bowl, beat sugar & butter until we’ll blended. Beat in pumpkin, egg & vanilla until smooth.
  4. Gradually beat in flour mixture.
  5. Drop dough by rounded tablespoons onto prepared baking sheet.
  6. Bake for 15-18 minutes or until edges are firm. Cool on baking sheet for 2 minutes, then move to a wire rack to cool completely.
Combine the filling ingredients in a bowl using an electric mixer. Beat well until the filling is smooth.
  8. When the cookies have completely cooled, Frost the bottom of a cookie, then press another cookie on top to make a sandwich. Repeat with remaining cookies.
Combine powdered sugar, corn syrup & water together. Stir in food coloring if desired.
  10. ** This glaze must be stirred each time before glazing each cookie. If it is not stirred vigorously before each one, it will dry with a mottled look instead of a solid color.
  11. Spread the glaze over the top of the cookie sandwich. It will dry to a hard, shiny finish. It dries quickly.
  12. Note: this glaze is also great as a base coat for decorated cookies.
