Often we don't eat much at supper time and meatless meals are perfect. I usually have English Muffins in the freezer, or a loaf of French Bread,but any thin slices of bread for toasting are fine. I use chopped green peppers or another color bell peppers or pimentoes and grated cheese. A simple white sauce with cheese is made, using my favorite of cheddar or swiss cheese. Good finger food! It makes more than I remembered, so I edited this.

Ingredients

  • ASSORTED VEGGIES:
  • 1 small bell pepper: green, red, yellow or orange
  • 1/2 teaspoon garlic powder, less if desired (optional)
  • 1/2 cup sliced onions (optional)
  • 1 jar sliced pimentoes (optional)
  • 1 cup sliced mushrooms (optional)
  • 4 - english muffins, split open and toasted lightly
  • WHITE SAUCE:
  • 1 cup milk
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup shredded grated cheese; your favorite for broiling

How To Make piccadilly circles ii

  • Step 1
    First prepare a white sauce: butter melted in a small saucepan, stir in flour, until smooth, slowly add milk stirring constantly with a whisk.(salt is optional) When thickened add the grated cheese and blend and add garlic.
  • Step 2
    Toast English muffins lightly,or the bread slices under the broiler.
  • Step 3
    Before topping the bread slices, mix the optional ingredients into the sauce, heating until they are soft,seasoning to taste with garlic, and if desired a little salt. If using regular salted butter and olives,and cheese,salt isn't really needed.
  • Step 4
    Broil until bubbly and golden brown,watch so they don't burn. These are so good if you use ingredients you like best, and with soup on a cold day they're wonderful. Originally I used chopped ham, but since I posted this to NO MEAT EATS, I left it out :)
