Piccadilly Circles II

Beth M.

Often we don't eat much at supper time and meatless meals are perfect. I usually have English Muffins in the freezer, or a loaf of French Bread, but any thin slices of bread for toasting are fine. I use chopped green peppers or another color bell peppers or pimentoes and grated cheese. A simple white sauce with cheese is made, using my favorite of cheddar or swiss cheese. Good finger food! It makes more than I remembered, so I edited this.

How to Make Piccadilly Circles II

  1. First prepare a white sauce: butter melted in a small saucepan, stir in flour, until smooth, slowly add milk stirring constantly with a whisk.(salt is optional) When thickened add the grated cheese and blend and add garlic.
  2. Toast English muffins lightly,or the bread slices under the broiler.
  3. Before topping the bread slices, mix the optional ingredients into the sauce, heating until they are soft, seasoning to taste with garlic, and if desired a little salt. If using regular salted butter and olives, and cheese, salt isn't really needed.
  4. Broil until bubbly and golden brown, watch so they don't burn. These are so good if you use ingredients you like best, and with soup on a cold day they're wonderful. Originally I used chopped ham, but since I posted this to NO MEAT EATS, I left it out :)
