This is a very old recipe. When my mother in law was just a little girl, she knew that making clothes had a pattern, but at that time she didn't know that with cooking it was a recipe. So she asked Pearl Weddle for her pattern for her chess cakes. It has been called a pattern ever since.

These are darling mini coconut chess cakes... wrapped in flaky pie dough! The best of both worlds!

  • 3 - eggs
  • 3 tablespoons whole milk
  • 2 tablespoons flour
  • 1 cup sugar
  • 1 cup coconut, shredded
  • 1 - recipe pie dough

Test Kitchen Tips
We cut small rounds from a refrigerated pie crust to make our mini shells.
  • Step 1
    Preheat oven to 400 degrees. Using a cup cake pan, line each cup cake with pie dough.
  • Step 2
    Combine the remaining ingredients to make a batter. Then fill each mini pie with the batter.
  • Step 3
    Finally Bake the chess cakes for 20 minutes
