This is a very simple recipe, but one that you don't wont to make too far in advance, as they could get soggy. Easy and delicious though...Enjoy

Ingredients
- I medium bag of tostito scoops
- 1 can refried beans
- 1 pound ground beef
- 1 package taco seasoning mix
- 1 cup thick and chunky salsa
- 1 cup sour cream
- 3 or 4 - chopped green onions
- - sliced olives
- 1 - bag of shredded mexican blend cheese
How To Make mini tacos

Step 1Cook and drain ground beef until no pink is showing. Drain

Step 2Add Taco Seasoning Mix and the water. Cook according to package directions. Add salsa and heat through. Remove from heat

Step 3Place scoops on a large cookie sheet or mini muffin pans. Using a butter knife, spread a small amount of the fried beans on each tostito, follow by adding a spoonful of the taco meat mixture and top with a small bit of cheese, covering top of chip.

Step 4Place in a 350 degree oven for about ten minutes until the cheese melts.

Step 5Top with sour cream and green onions.
