mexican style street corn

In most Chicano communities we are visited by eloteros, (corn vendors) that serve this dish either on the cob or in a dish. However, the eloteros stop traveling once the weather is too cold. So for those of us in cold weather climates; this is a simple and quick snack to sate our winter cravings.

Ingredients For mexican style street corn

  • 1 can
    whole kernel corn
  • 1/4 stick
    butter
  • 1 Tbsp
    mayonnaise
  • 1/2 c
    grated cotija cheese, can be substituted with parmesan
  • 1 or 2 tsp
    cayenne pepper

How To Make mexican style street corn

  • 1
    Open can of corn and empty all water.
  • 2
    Add butter, and prepare corn either on stove top or microwave.
  • 3
    Once you reach desired temperature remove corn from heat and place in serving bowl. Add mayonnaise, and cheese. Mix well.

    Sprinkle cayenne as liberally as you can handle and serve.
