This is for this weeks Sandwich Challenge. The challenge was using only ingredients that have the letters L.O.G.A.N, hence my creation. L.O.G.A.N. Pizza L = Lavash O = Olive Oil, lemon infused with Gorgonzola G = Genoa Salami A = Arugula N = Nuts (Pine Nuts) Lavash is an Armenian Flatbread. I was able to find it at my local Wal-Mart in the deli section.

Ingredients

  • 4 - 8 inch square lavash bread
  • 1 cup olive oil lemon infused with gorgonzola
  • 2 tablespoons olive oil lemon infused with gorgonzola
  • 1/2 pound genoa salami, sliced
  • 8 cups arugula, chopped
  • 1/4 cup pine nuts, toasted and chopped

How To Make logan pizza

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Place lavash bread squares on two baking sheets or pizza stones.
  • Step 3
    Divide and layer genoa salami between the four squares.
  • Step 4
    Spread 1/4 cup of olive oil lemon infused with Gorgonzola evenly over the top of each salami covered square.
  • Step 5
    Place in oven and bake for approximately 6-8 minutes until bread becomes slightly crunchy and cheese is melted.
  • Step 6
    Toss chopped arugula with two tablespoons of olive oil lemon infused with gorgonzola.
  • Step 7
    Mound salad on top of the four pizzas followed by a sprinkling of toasted pine nuts.
