grilled cheese quesadillas w/chili jam

For our version, we used a combination of sharp white cheddar cheese, queso oaxaca and queso manchego. I experimented with a delicious yet not too overly spicy homemade jalapeno jam a friend of mine made and also a trio of store bought but good quality berry-based red chili jams. Ingredients

  • 8 - flour tortillas
  • 3 ounces red chili jelly or similar chili jelly
  • 6 ounces sharp cheddar cheese, grated (read recipe intro)
  • 6 ounces mozzarella cheese, grated
  • - cooking oil, for brushing

How To Make grilled cheese quesadillas w/chili jam

  • Step 1
    Preheat the BBQ grill to MEDIUM (about 350º F/180º C.) Grease the grill.
  • Step 2
    Lay 4 tortillas on a prep table. Spread with the chili jelly then sprinkle with the grated cheese. Gently press the remaining tortillas over the cheese mixture.
  • Step 3
    Brush both top and bottom of the quesadillas with cooking oil and grill on the BBQ for approximately 3 minutes each side or until the tortillas have started to crisp and have grill marks.
  • Step 4
    Cut into wedges, serve and enjoy!
