Our farmer’s market carries a great selection of raw nuts and seeds so we decided to make our own granola without the usual carbs and sugars. If you are not concerned about sugar, you can use regular brown sugar in place of the Truvia. We like this with plain yogurt and blueberries or strawberries, added to regular breakfast cereal, and as a snack/trail mix.

Ingredients

  • 2 cups unsweetened coconut flakes
  • 2 cups slivered raw almonds
  • 2 cups raw pecans, roughly chopped
  • 1 cup raw walnuts, roughly chopped
  • 2 tablespoons ground flaxseed
  • 1/2 cup raw pepitas, hulled
  • 1/2 cup raw sunflower seeds, hulled
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup truvia sweet complete brown sugar substitute
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons coconut oil, melted

How To Make grain free granola - no sugar added

  • Step 1
    Preheat oven to 325 degrees F. Line a large baking sheet with parchment paper or foil.
  • Step 2
    Place all ingredients in a large bowl in the order given. Then stir well until all pieces appear to be lightly coated with oil. Pour onto prepared baking sheet.
  • Step 3
    Bake at 325 degrees for 20 - 25 minutes or until lightly golden brown. Watch carefully beyond 20 minutes as this mixture can, and will, burn very quickly if not removed once golden brown.
  • Step 4
    Remove pan from oven. Let cool completely and the nuts have absorbed the oils. Package in Ziploc bags, jars, or vacuum seal portions. If kept in a cool place, this granola should last up to 3 weeks. Make great gifts for friends and family.
