Everyone has their own version of this recipe and this is mine, lol. I took away some of the cucumbers and it made the flavors stronger. Don't skip out on having ranch Doritos - they are key.

Blue Ribbon Recipe

This delicious cucumber salsa is a cross between a tangy cucumber salad and spicy salsa. It's not your typical salsa, but it's delicious. Diced cucumbers make it very refreshing. The Rotel does have a little kick, so if you are sensitive to spice use the mild variety. A packet of ranch dressing brings all the flavors together. After this chills for a few hours, the flavor gets even better. Serving with ranch Doritos is a must. Enjoy this salsa as a refreshing summertime snack. It would be great on top of grilled fish or chicken too.

  • 3 cucumbers, diced
  • 1/2 red onion, diced
  • 1 can Rotel, drained (10 oz)
  • 1 package dry ranch dressing
  • 1/4 cup apple cider vinegar
  • 1 bag Ranch Doritos

How To Make ginny's cucumber salsa

  • Ingredients added to a bowl.
    Step 1
    Mix all of the prepared items into a large bowl.
  • Refrigerating the salsa.
    Step 2
    Refrigerate for a few hours for flavors to blend.
  • Scooping Ginny's Cucumber Salsa on a tortilla chip.
    Step 3
    Serve with ranch Doritos and enjoy!
