easy no-bake granola bars

Our family loves Granola Bars! So here is my version. Hope you enjoy them as much as we do!

Ingredients

  • 3 cups rice krispies cereal (may also use coco krispies)
  • 2 cups grape nuts cereal (or another wheat & barley)
  • 4 cups quick cooking oats, uncooked
  • 1/2 cup coconut, flaked, or shredded
  • 1 teaspoon cinnamon, ground (heaping if you like more)
  • 1 cup brown sugar, firmly packed
  • 1 cup light corn syrup
  • 1 cup peanut butter, (creamy) or almond butter
  • 2 teaspoons vanilla extract
  • 1 1/2 cups milk chocolate chips
  • 1 cup healthy nut mixture, sunflower seeds, peanuts, pumpkin seeds, cashews or what you perfer

How To Make easy no-bake granola bars

  • Step 1
    Mix the first 5 ingredients into a extra large bowl.
  • Step 2
    Bring brown sugar and light corn syrup to a boil for 2 minutes, remove from heat, add the vanilla and peanut butter and stir well until all is blended.
  • Step 3
    Pour brown sugar mixture into dry Cereal and Oats mixture. Stir quickly as it gets more gooey as it cools. Wait about 2-3 minutes, then add the chocolate chips and nuts....coat well.
  • Step 4
    Using a 12X18 jelly roll pan, dump Granola mixture into buttered (or no stick spray)pan. You can use Wax Paper or a good plastic spoon/spatula for pressing Granola into prepared pan evenly. Put in fridge to firm up a bit, then cut into your desired pieces. These are absolutely scrumptious....Enjoy!
