My Daddy married my Mother and brought her to America when she was 18. His mother (my grandmother) taught her how to cook, so needless to say they are both AWESOME cooks, this is one thing she taught her and we love it, everyone request it anytime we get together and have food.

1 medium cucumber, do not peel, grated on cheese grater
1 block of cream cheese softened
salt to bring out liquid in cucumber
season with pepper and garlic powder to taste
dried dill, optional

How to Make Cucumber Dip


  • 1Grate cucumber and salt it to bring out liquid, let set for 5-10 minutes. Add cream cheese and season with pepper and garlic powder, mix with fork. Eat with Fritos.
  • 2This recipe also makes wonderful cucumber sandwiches, even the guys like them. Grate and season with salt but let it sit and drain all liquid, (I use paper towel in a colinder then squeeze it out after most all liquid had drained off) In this I always use the dill. Mix and spread on any kind of bread you like. My favorite is the Hawaiian rolls.
