This fritters is crispy in the outside and tender inside. For more delicious flavor, use 1 tablespoon sriracha mix together with 1 tablespoon Thai sweet chili sauce, become sweet and spicy dipping sauce. You can substitute fried shallot with chopped french fried onions.

Ingredients
- 1 can whole kernel sweet corn
- 1 - scallion, chopped
- 2 - lemon leaves, minced
- ¼ teaspoon ground coriander
- 1 tablespoon fried shallot
- 4 - macadamia nuts, grinded
- ¼ teaspoon white pepper
- ½ teaspoon salt
- ¼ teaspoon chicken bouillon
- ¾ cup all purpose flour
- 1 - egg
- - oil for frying
How To Make corn fritters

Step 1Combine and mix well all ingredients in a medium bowl.

Step 2Let the batter rest in about 10 minutes.

Step 3Heat the oil in heavy pot. Use a cookie scoop to drop fritter batter into hot oil, fry and flip once until light golden brown.
