The ingredients in this recipe is different but very tasty. I hope you enjoy it. Feel free to post your picture I don't have a camera. I do believe you will enjoy these bars.

Ingredients

  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 1/3 cups crushed kellog's frosted mini wheats
  • 1/4 cup whole milk
  • 1 cup canned pumpkin (not pie mix)
  • 1 teaspoon vanilla extract
  • 1/2 cup butter flavored crisco
  • 1/2 cup brown sugar, firmly packed
  • 1 medium egg
  • TOPPING
  • 1 medium egg
  • 1/4 cup brown sugar, firmly packed
  • 1 cup coconut, flaked
  • 1/2 cup chopped walnuts

How To Make coconut pumpkin bars

  • Step 1
    BARS: Stir together flour, baking powder, baking soda,salt, cinnamon, and nutmeg. SET ASIDE
  • Step 2
    In medium bowl, stir together crushed frosted mini wheats, milk, pumpkin, and vanilla. LET STAND 15 MINUTES
  • Step 3
    Meanwhile in large mixing bowl, beat shortening, and 1/2 cup sugar, until light and fluffy, add one egg, beat well. Stir in pumpkin mixture,ADD...Flour mixture, mix well to combine.
  • Step 4
    Spread batter evenly in a 13 x 9 x 2 baking pan.
  • Step 5
    In a small mixing bowl, beat remaining egg until it is lemon colored. Gradually add 1/4 cup sugar, beat until thick. stir in coconut and walnuts. Spread evenly over batter in pan.
  • Step 6
    Bake in preheated oven at 350 degrees F for 30 - 35 minutes. Remove from oven and cut into 30 squares
