Ingredients
- 1 cup all purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 1/3 cups crushed kellog's frosted mini wheats
- 1/4 cup whole milk
- 1 cup canned pumpkin (not pie mix)
- 1 teaspoon vanilla extract
- 1/2 cup butter flavored crisco
- 1/2 cup brown sugar, firmly packed
- 1 medium egg
- TOPPING
- 1 medium egg
- 1/4 cup brown sugar, firmly packed
- 1 cup coconut, flaked
- 1/2 cup chopped walnuts
How To Make coconut pumpkin bars

Step 1BARS: Stir together flour, baking powder, baking soda,salt, cinnamon, and nutmeg. SET ASIDE

Step 2In medium bowl, stir together crushed frosted mini wheats, milk, pumpkin, and vanilla. LET STAND 15 MINUTES

Step 3Meanwhile in large mixing bowl, beat shortening, and 1/2 cup sugar, until light and fluffy, add one egg, beat well. Stir in pumpkin mixture,ADD...Flour mixture, mix well to combine.

Step 4Spread batter evenly in a 13 x 9 x 2 baking pan.

Step 5In a small mixing bowl, beat remaining egg until it is lemon colored. Gradually add 1/4 cup sugar, beat until thick. stir in coconut and walnuts. Spread evenly over batter in pan.

Step 6Bake in preheated oven at 350 degrees F for 30 - 35 minutes. Remove from oven and cut into 30 squares
