Ingredients

1 call purpose flour
-
1 tspbaking powder
-
1/4 tspbaking soda

1/2 tspsalt

1 tspground cinnamon

1/2 tspground nutmeg
-
1 1/3 ccrushed kellog's frosted mini wheats
-
1/4 cwhole milk
-
1 ccanned pumpkin (not pie mix)

1 tspvanilla extract
-
1/2 cbutter flavored crisco
-
1/2 cbrown sugar, firmly packed

1 mediumegg
-
TOPPING
-
1 mediumegg
-
1/4 cbrown sugar, firmly packed

1 ccoconut, flaked
-
1/2 cchopped walnuts
How to Make COCONUT PUMPKIN BARS
- BARS: Stir together flour, baking powder, baking soda,salt, cinnamon, and nutmeg. SET ASIDE
- In medium bowl, stir together crushed frosted mini wheats, milk, pumpkin, and vanilla. LET STAND 15 MINUTES
- Meanwhile in large mixing bowl, beat shortening, and 1/2 cup sugar, until light and fluffy, add one egg, beat well. Stir in pumpkin mixture,ADD...Flour mixture, mix well to combine.
- Spread batter evenly in a 13 x 9 x 2 baking pan.
- In a small mixing bowl, beat remaining egg until it is lemon colored. Gradually add 1/4 cup sugar, beat until thick. stir in coconut and walnuts. Spread evenly over batter in pan.
- Bake in preheated oven at 350 degrees F for 30 - 35 minutes. Remove from oven and cut into 30 squares
