These are great by themselves, but I like to put more fillings in them! Sweetened strawberries are my favorite, but they're good with anything. It only takes a very small amount of filling, or they would be too hard to roll.
Sprinkle Mozzarella evenly (just enough to completely coat) in a small frying pan.
Cook over medium heat just until the cheese starts to brown.
Dot with 1/2 tsp-sized bits of cream cheese in a line across the middle.
Using a spatula, roll the mozzarella up and over the cream cheese, forming your "crepe". Remove to a paper-towel covered plate, and, using the towel, roll back and forth to absorb the grease from the cheese and help perfect the shape of the roll.
