Makes 15 cups
Ingredients
- 8 cups popped popcorn
- 4 cups rice chex
- 2 cups mini pretzels (omit)
- 1 cup pecan halves (use pieces instead)
- 1 cup packed brown sugar
- 1/2 cup butter
- 1/4 cup light corn syrup
- 1 teaspoon vanilla
- 1 teaspoon baking soda
How To Make caramel corn snack mix

Step 1Oven to 300 degrees. Mix popcorn, chex, pretzels and pecans. In 2 quart saucepan combine brown sugar, butter and corn syrup. Cook over medium heat, stirring, until it comes to a boil over entire surface. Reduce heat to medium low and cook 5 minutes without stirring. Remove pan from heat. Quickly stir in vanilla and soda, stirring carefully. Pour over popcorn and stir until well coated. Bake 30 minutes, stirring after 15 minutes. Put onto a large piece of parchment paper. Cool completely, breaking into clusters as it cools.

Step 2Note: if using microwave popcorn, use a reduced fat (light or natural) type to get best results.
