A staple nut of the south, Pecans are grown here close to me at the Little Eva Plantation.
At the holidays I always make up some goodies for friends, employees, and such and this is one item that I end up putting in the goody bag along with some Popcorn Caramel Crunch (see recipe).

2 1/4 cpacked brown sugar
1 cbutter or margarine
1 clight corn syrup
1 can(s)(14-ozs) sweetened condensed milk
1 tspvanilla extract
1 1/2 lbwhole pecans
1 csemisweet chocolate chips
1 cmilk chocolate chips
How to Make Pecan Delights
- In a large saucepan, combine the first four ingredients. Cook over medium heat until all sugar is dissolved. Gradually add milk and mix well. Continue cooking until a candy thermometer reads 248 degrees (firm-ball stage).
- Remove from heat; stir in vanilla until blended. Fold in the pecans. Drop by tablespoonfuls onto a greased or parchment paper-lined baking sheet. Chill until firm. Loosen from paper.
- Melt chocolate chips and shortening in a microwave-safe bowl or double boiler. Drizzle over each cluster. Cool.
