This is very simple to make and tastes great on toast or muffins. Good also between layer cake or fresh baked bread...paancakes, waffles...French toast,,

Ingredients

  • 1/3 cup raisins or craisins
  • 1/2 pound firm tofu
  • 1/2 cup pure maple syrup
  • 1 tablespoon tahini
  • 2 teaspoons all purpose flour
  • 1/2 cup very hot water
  • 1/4 cup vanilla soy yogurt
  • 1/2 teaspoon ground cinnamon
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon maple extract
  • 1/3 cup chopped walnuts

How To Make maple nut spread

  • Step 1
    Place raisins in a small bowl and pour the hot water over them; set aside. Place remaining ingredients, except the raisins and nuts in a blender or food processor. Blend well, scrape down sides if necessary.
  • Step 2
    Drain raisins and chop into small pieces or chop in blender. Add raisins and nuts to the tofu mixture and blend well.
  • Step 3
    Pour mixture into a greased baking dish and bake uncovered for 40 minutes. Mixture will keep in refrigerator for up to 3 days or so.
