dried cranberry and walnut granola

I got this recipe from a class at Sur la Table, I thought it would be just like every other granola I have had but I was wrong. The kosher salt really makes this dish, you might even think of using sea salt to get that nice salty kick! Sub any of your favorite dried fruits into this and it will be a great holiday gift!

Ingredients

  • 3/4 cup chopped walnut pieces
  • 4 cups old-fashioned rolled oats
  • 8 tablespoons (1 stick) unsalted butter
  • 1/3 cup pure maple syrup or honey
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt
  • 1/2 cup raisin or currants
  • 1/2 cup dried cranberries
  • 1/4 cup finely chopped dried apricots

How To Make dried cranberry and walnut granola

  • Step 1
    Preheat oven to 350 degrees and place a rack in the center. Place walnuts and oats in a large mixing bowl, and stir to combine.
  • Step 2
    In a medium saucepan, melt butter and add maple syrup, vanilla, cinnamon, and salt, stirring to combine.
  • Step 3
    Pour butter mixture over walnut mixture and stir well to coat. Add raisins, cranberries, and apricots. Stir well to thoroughly combine.
  • Step 4
    Line a rimmed baking sheet with parchment paper or a Silpat baking mat. Pour granola into prepared sheet pan and spread evenly using a rubber spatula.
  • Step 5
    Place in preheated oven and bake, stirring once, until golden, about 20 to 25 minutes. Remove pan from oven and allow to cool completely. Can be stored in an airtight container up to 1 week.
