These are really yummy. My 16 month old loves them too...minus the cranberries and raisins.

Blue Ribbon Recipe

Throw a couple of these homemade granola bars in a resealable bag and you have a great on-the-go snack. They're chewy, sweet, and full of texture. Puffed rice gives them a little crunch and the oats are chewy. The peanut butter flavor is faint, but there. We loved the tart contrast from the dried cranberries. So good!

Ingredients

  • - cooking spray
  • 2 cups old-fashioned oats
  • 2 cups puffed rice cereal
  • 1/2 cup sunflower seeds and/or slivered almonds
  • 1/4 cup wheat germ
  • 1/2 cup coconut, shredded
  • 1/4 cup dark or semi-sweet chocolate chips
  • 1/4-1/2 cup raisin and/or craisins
  • 1 cup brown sugar
  • 1 cup corn syrup, light
  • 1 cup peanut butter, creamy
  • 1 teaspoon pure vanilla extract

How To Make chewy granola bars

  • Parchment paper covered in cooking spray in a baking dish.
    Step 1
    Line a 13x9-inch pan with parchment or wax paper. Spray with cooking spray.
  • Oats, puffed rice, sunflower seeds, wheat germ, chocolate chips, coconut, and raisins in a bowl.
    Step 2
    In a large bowl combine oats, puffed rice, sunflower seeds, wheat germ, chocolate chips, coconut, and raisins. Set aside.
  • Brown sugar, corn syrup, and peanut butter in a bowl.
    Step 3
    In a microwave-safe bowl, combine brown sugar, corn syrup, and peanut butter. Heat on high for 2 minutes until the mixture boils, stirring halfway through.
  • Adding vanilla extract.
    Step 4
    Stir in vanilla extract.
  • Pouring peanut butter mixture over oat mixture.
    Step 5
    Pour the peanut butter mixture over the oat mixture; stir until it is moist.
  • Mixture pressed into the baking dish.
    Step 6
    Press firmly into the pan.
  • Cutting the Chewy Granola Bars.
    Step 7
    Let sit for one hour before cutting into bars.
  • Step 8
    **These are really chewy, but if you like a crunchy granola bar you can put them in the fridge and they will harden right up** ENJOY!!
