I am trying to share recipes that make good travel recipes..I made these for a quick happy hour more than once..I kept the canned corned beef handy just in case

Ingredients

56 - triscuit crackers
1 1/4 cups shredded swiss cheese..divided
1 can 8 oz. sauerkraut, drained
1/4 pound corned beef chopped
3 - eggs
1 1/2 cups milk
1/4 cup dijon mustard
1 tablespoon chopped parsley

How To Make rv friendly reuben bites

Step 1

Preheat oven to 350

Step 2

arrange 28 crackers in rows in a greased 13 x 9 pan Cover with layers of 3/4 cup of the cheese, the saurkraut, corned beef and then remaining half cup of cheese. Top with remaining crackers
Step 3

Beat eggs, milk, mustard, and parsley with wire whisk until well blended, pour over ingredients in baking dish
Step 4

Bake 40 minutes or until puffed and golden brown.Let stand 10 minutes..Cut into 28 squares, cut between the crackers and serve warm
